Very Berry Salad with Blood Orange Poppy Seed Dressing

The fresh sweet berries in this salad are complemented by robust and crunchy maple pecans along with the zesty zing of fresh red onions.

Ingredients

  • ¼ pound, or 4 cups, mixed greens or fresh spinach
  • 1 cup blueberries
  • 1 pint strawberries, hulled and sliced
  • 1 cup maple glazed pecans
  • ¼ medium red onion, thinly sliced
  • 2 cups pecan halves
  • ½ cup maple syrup
  • ½ teaspoon salt

Preparation

Because it is easier to deal with more in the pot and pan, this recipe makes extra glazed pecans. But, no worries, you’ll make good use of them as a tasty snack.

Prepare a baking pan with a sheet of parchment.

Add the pecans, maple syrup and salt to a pot on the stove and cook at low heat stirring frequently.

When most of the syrup is absorbed (about 15 minutes) turn the pecans out onto the baking pan.

Broil for about 1½ minutes. They can burn quickly so watch carefully and adjust the time.
