Traditional tonnato sauce begins with a fresh piece of white tuna simmered in wine and vinegar with onions and garlic. It is then puréed with olive oil, egg yolks and seasonings, and often includes anchovies or capers. This is a shortcut version that is still quite addictive.

  • 1 can oil-packed tuna, drained
  • ½ cup mayonnaise
  • 1/8 teaspoon salt
  • 1 clove of garlic, sliced
  • 1 tablespoon capers, drained
  • ¼ cup olive oil
  • 1 tablespoon lemon juice

Preparation

Instructions:

Pulse tuna, mayonnaise, salt, garlic and capers in a food processor until creamy.

Drizzle in olive oil and lemon juice and process until very smooth.
