No-bake Chocolate Chip Nut Butter Energy Balls

No-bake energy balls are delicious bite-sized treats that have become increasingly popular among both vegans and non-vegans. Ingredients

SERVINGS: Makes about 10–12 energy balls
  • Dry Ingredients
  • 1 cup rolled oats
  • 1 scoop vanilla protein powder (optional)
  • 1/3 cup ground flax seeds
  • ¼ cup mini chocolate chips
  • Pinch of sea salt to taste
  • Pinch of cinnamon (optional)
  • Wet Ingredients
  • ½ cup nut butter (almond or natural peanut butter)
  • ¼ cup pure maple syrup

Preparation

Instructions:

In a large bowl, combine dry ingredients.

Add wet ingredients and mix well. (The final mixture will look wet.)

Place the bowl in the refrigerator for about 5 to 10 minutes. This gives the mixture time to set, allowing the ingredients to adhere and making the balls easier to roll.

With your hands, roll the mixture into bite-sized balls and place in a sealed container, storing them in the fridge for up to 3–4 days. They can also be frozen.

Notes

The size of your energy balls is simply up to you! A tablespoon per ball should give you the perfect “bite-sized” piece.

If the chocolate chips don’t work for you, you could substitute with endless options. Raisins, dried cranberries, chopped dates and walnuts are just a few alternative choices.
