Make Your Own Orange and Carrot Marmalade

Marmalades are natural toppings for cheese, shortcake, pancakes or bread. They can also be used in marinades and dressings. This will last in your refrigerator for several weeks.

Ingredients

Orange and Carrot Marmalade
  • 3 pounds carrots, chopped
  • 3 lemons, pitted and chopped
  • 4 oranges, pitted and chopped
  • 4 pounds sugar

Instructions

1. Pulse fruit and carrots in a food processor in batches.

2. Mix sugar, fruit and carrots in a large pot.  Bring to a boil and cook for 1½ to 2 hours, stirring frequently, until ingredients soften.

3. Ladle into warmed jelly jars while the mixture is still warm.
