Full Moon Bites

This no-bake treat goes nicely with various types of cheese and it is also good for you! Because dates and walnuts are high in potassium, B vitamins and iron as well as other nutrients, these make a nourishing snack.

Ingredients

SERVINGS: 20 Pieces
  • 12 medjool dates (pitted)
  • 2 tablespoons ground flaxseed
  • 3 tablespoons warm water
  • 1 cup chopped walnuts
  • 3 tablespoons white sugar
  • 3 tablespoons almond flour
  • A few drops olive oil (optional)

Preparation

Soak dates in water for a few hours or overnight in the refrigerator.

Mix warm water into the flaxseed and let it sit for a few minutes.

Slice the soaked dates into quarters. This helps prepare the dates for processing and also helps to check for the occasional missed pit. Add dates, flaxseed mixture and walnuts to food processor and pulse a few times to mix well. The mixture should be about the consistency of chunky peanut butter, leaving the walnuts in tiny chunks.

Refrigerate for a bit if you have time.

Combine almond flour and sugar in a plate. Moisten hands with a few drops of olive oil. Roll date mixture into 1-inch balls, then coat the balls in almond sugar mixture.

Place in mini baking cups. Refrigerate until ready to serve.
