Chickpea and Black Rice Burgers

Ingredients

  • 2 cups cooked chickpeas (or 1 can, drained)
  • 1 cup cooked black rice
  • ¼ cup finely diced red pepper
  • ¼ cup finely diced sweet onion
  • 1 tablespoon sriracha sauce
  • 2 tablespoons water
  • 1½ teaspoons cumin
  • 1–2 cloves finely diced garlic
  • Salt and pepper to taste
  • ½ cup chickpea flour

Preparation

Preheat oven to 400 degrees.

Combine the first nine ingredients and mash the chickpeas as you mix. Then add chickpea flour and stir thoroughly.

Let mixture sit for about 15–20 minutes.

Warm a lightly oiled baking sheet in the preheated oven for about 5–10 minutes.

Shape the bean mixture into ¼-cup patties and place on the heated baking sheet.

Cook in the oven for 15 minutes, then flip and cook for 10 minutes more.

Burgers can be made ahead of time and reheated in a skillet, and they are especially good if they are warmed in a pan where you have made caramelized onions or sautéed mushrooms to be served alongside.

Serve with chimichurri sauce, a light lemon yogurt sauce or guacamole.
