Ingredients
- Ice Cream
- 1½–2 pints of salted caramel vanilla ice cream. Other favorite flavors, from plain vanilla to butter pecan or maple walnut, will also work.
- 3 cups chopped apples (with skin)
- 1 tablespoon brown rice flour
- 2 tablespoons sugar
- ½ teaspoon cinnamon
- 1 tablespoon orange juice
- 1/3 cup rolled oats
- 1/8 cup finely chopped hazelnuts
- ¼ cup butter, almost melted
- 1/3 cup brown sugar
- ¼ teaspoon salt
- 1 cup aronia berries
- ½ cup orange juice
- ½ cup water
- ¼ cup honey
- 1 tablespoon cornstarch
Instructions
Apple Crisp
Preheat oven to 375 degrees.
Mix first 5 ingredients and put them in a greased 8- by 8-inch pan.
Mix the next 5 ingredients well and spread on top of the apple mixture.
Bake for 35–40 minutes, until nicely browned and crispy
Aronia Berry Sauce
Purée the berries first for a smoother sauce. Then cook berries, orange juice and water over medium heat until the 2 cups reduce to 1½ cups of liquid, stirring occasionally. Add honey and stir for about two minutes.
In a small bowl, mix 1 tablespoon of cornstarch with 3 tablespoons of warm berry juice from your pan. Stir until you get a smooth paste, then add the mixture back into the pan. Keeping the pan at low heat, stir the mixture until it thickens. Refrigerate until you are ready to use.
