Caramel Apple Crisp with Aronia Berry Sauce Parfaits

Layer apple crisp, caramel vanilla ice cream and aronia berry sauce in a dish, topping with aronia sauce. Serve the crisp while slightly warm so that the ice cream and sauce melt and mingle.

Ingredients

  • Ice Cream
  • 1½–2 pints of salted caramel vanilla ice cream. Other favorite flavors, from plain vanilla to butter pecan or maple walnut, will also work.
Apple Crisp
  • 3 cups chopped apples (with skin)
  • 1 tablespoon brown rice flour
  • 2 tablespoons sugar
  • ½ teaspoon cinnamon
  • 1 tablespoon orange juice
  • 1/3 cup rolled oats
  • 1/8 cup finely chopped hazelnuts
  • ¼ cup butter, almost melted
  • 1/3 cup brown sugar
  • ¼ teaspoon salt
Aronia Berry Sauce
  • 1 cup aronia berries
  • ½ cup orange juice
  • ½ cup water
  • ¼ cup honey
  • 1 tablespoon cornstarch

Instructions

Apple Crisp

Preheat oven to 375 degrees.

Mix first 5 ingredients and put them in a greased 8- by 8-inch pan.

Mix the next 5 ingredients well and spread on top of the apple mixture.

Bake for 35–40 minutes, until nicely browned and crispy

Aronia Berry Sauce

Purée the berries first for a smoother sauce. Then cook berries, orange juice and water over medium heat until the 2 cups reduce to 1½ cups of liquid, stirring occasionally. Add honey and stir for about two minutes.

In a small bowl, mix 1 tablespoon of cornstarch with 3 tablespoons of warm berry juice from your pan. Stir until you get a smooth paste, then add the mixture back into the pan. Keeping the pan at low heat, stir the mixture until it thickens. Refrigerate until you are ready to use.
