Pancakes: Breakfast Comfort Food
Pancakes come in many textures and flavors with versions found in most cultures around the world. While they can be served any time of day, for many people they are the ultimate breakfast comfort food. Ask a friend about their favorite pancakes and you almost assuredly will get not only an answer, but a corresponding story, as well. Edible Western NY contributors share their favorite recipes and stories for early spring and maple syrup season.
Photographer and writer, Jill Bornand, shares a recipe for lemon ricotta pancakes created by Sally Vargas for Simply Recipes. "While leading cycling trips in northern California wine country, I usually grabbed a quick breakfast of yogurt and granola. One morning a week, I took the time to order and eat a hot breakfast in between prepping bikes for the day, filling water bottles, making lunch and setting out a snack table, all before our guests would arrive bright and early to be sent on their way. And it was only for the lemon cottage cheese pancakes from the Big 3 Diner in Sonoma that I made the time during those hectic early mornings. The recipe for those pancakes is available online, but only in large quantities of ingredients, and when sizing down, it just didn’t seem the same (not to mention TWO sticks of butter!). In my search to replicate them, I also came across recipes that used ricotta instead of cottage cheese. The more lemon the better, in my opinion." —Jill Bornand
