Maple Ridge Bison Meatloaf

Bison meat is low in calories, fat and cholesterol yet high in protein, minerals, iron and omega-3 fatty acids. Touted as a lean meat alternative to poultry or fish, bison is also fast becoming known as a heart-healthy alternative to beef. According to Jeffrey Goodyear at Maple Ridge Bison Ranch, the taste is similar to beef yet slightly sweet. Substitute bison meat for ground beef in a comforting meatloaf recipe perfect for any night of the week.

Ingredients

  • 1 pound ground bison
  • 1 egg
  • ½ cup bread crumbs
  • ¼ cup Parmesan cheese, grated
  • 1 medium onion, diced
  • 2–3 cloves garlic, finely chopped
  • ½ tablespoon Italian seasoning
  • Salt and pepper, to taste
  • 1 cup tomato sauce

Preparation

Instructions:

Mix all ingredients except tomato sauce well. Form mixture into a loaf and place in a baking dish or loaf pan. Cover with tomato sauce.

Bake at 350 degrees for 45 minutes to 1 hour, until no pink remains.

Garnish with Parmesan cheese and serve with roasted carrots and potatoes. Optional: Add chopped carrots and potatoes to the roasting pan, cover with an extra cup of tomato sauce and bake with the meatloaf.
