Latino Pork chops with Fresh Limes

Pouring fresh lime juice over hot grilled pork chops enhances both the flavor and balance.

Ingredients

  • 3–4 ( ½ -inch-thick) pork chops (bone-in) olive oil
  • Pepper (freshly ground) to taste
  • Kosher or sea salt to taste
  • Carne asada and bistec seasoning
  • Fresh lime wedges

Preparation

1. Prepare pork chops, pat dry and generously apply olive oil to all sides.

2. Season (top side only) with salt and pepper.

3. Apply carne asada seasoning on all sides of the chop and let stand for one hour.

4. Prepare charcoal fire on grill for an evenly heated grilling base.

5. Grill chops on all sides with high heat, searing in seasoning and juices.

6. Remove from grill at 140 degrees (internal temperature) and cover with foil for 15 minutes to rest for a medium finish.

7. Serve with fresh cut limes and squeeze juice over top of chops.
