Grilled Crostini with Crumbled Gorgonzola Cheese
Crostini are simply toasted bread, but when that bread is grilled, then sprinkled with crumbled Gorgonzola cheese, the crostini become almost magical.
1. Prepare pork chops, pat dry and generously apply olive oil to all sides.
2. Season (top side only) with salt and pepper.
3. Apply carne asada seasoning on all sides of the chop and let stand for one hour.
4. Prepare charcoal fire on grill for an evenly heated grilling base.
5. Grill chops on all sides with high heat, searing in seasoning and juices.
6. Remove from grill at 140 degrees (internal temperature) and cover with foil for 15 minutes to rest for a medium finish.
7. Serve with fresh cut limes and squeeze juice over top of chops.
