Peas Shittakes and Garlic Scapes | Edible Western NY

What do Edible magazine publishers scattered across the U.S. and Canada do when a pandemic hits and the economy slows to a crawl? They pool resources and collaborate on a digital cookbook full of recipes and cooking tips to help readers stuck at home find a creative outlet through cooking while exploring foods from communities all over the continent.

Recipes for Home is delivered as a downloadable pdf with more than 100 pages of recipes from Alaska to Florida and Southern California to Toronto along with links to “how to” videos and podcasts. Recipes are listed alphabetically by Edible title, which means you can start your cooking journey with Alaska Niçoise or Moose Crostata and come close to finishing in Western New York with Peas, Shiitakes & Garlic Scapes. However, you really won’t want to stop until you try the Strawberry Balsamic Mascarpone Pie from Edible WOW in Southeast Michigan. Try five ways to prepare beans from Edible Boston or pulled pork three ways from Edible Bozeman. Edible Northeast Florida shares a recipe for Florida Citrus Pie while Edible Vancouver Island serves up Halibut Cheeks with Green Pea Arancini.

Edible Communities has been celebrating local food, season by season, community by community for almost 20 years. With a network of more than 80 independently owned, locally focused magazines, including Edible Western NY since 2016, it is the largest media organization devoted to telling the stories and sustaining the efforts of farmers, chefs, food artisans, fishers, vintners, and home cooks.

From the cookbook’s introduction and Edible Communities Co-Founder Tracey Ryder: “At the core of what every Edible magazine provides for their readers is a sense of well-being—a feeling that everything is right in the world—a celebration of seasonal eating and of enjoying meals around the table. Today, however, we find ourselves in unsettling times that have shaken that sense of well-being and have made us question what we can count on. The local food businesses we support and champion throughout the year are struggling, or are shuttered entirely, and we find ourselves isolated and cut off from our communities in a way we never could have imagined before now. This cookbook, then, is our way of offering delicious inspiration from Edible communities everywhere. Our hope is that you and your family are safe and well and that this collection of recipes brings you sustenance and a sense of connection.”
