Ingredients
- 1 Persian cucumber
- 1 cup plain Greek yogurt
- 1 clove garlic
- 1 teaspoon sea salt
- 2 tablespoons fresh lemon juice
- ½ tablespoon red wine vinegar
- 2 tablespoons fresh basil
- 2 tablespoons fresh parsley
- 2 tablespoons fresh chives
- 1 tablespoon fresh dill
- 1 tablespoon fresh mint
Instructions
- Prepare the cucumber: Grate the Persian cucumber on the large holes of a box grater. Place the grated cucumber in a clean kitchen towel or cheesecloth and squeeze out as much liquid as possible. Discard the liquid.
- Blend the sauce: In a food processor, combine the Greek yogurt, garlic, sea salt, lemon juice, red wine vinegar, fresh basil, fresh parsley, chives, dill and mint.
- Blend until smooth and creamy.
- Transfer the blended sauce to a bowl and stir in the squeezed grated cucumber.
- Taste and adjust seasoning with more salt and lemon zest, if desired.
- Chill (optional): For the best flavor, chill the sauce in the refrigerator for at least 30 minutes before serving.
